Elizabeth Kopf Watson
October 12, 1951 – June 16, 2022
ZEBULON – Elizabeth Kopf Watson, 70, passed away on Thursday, June 16, 2022. She was born in Nassau County, New York to the late William Frances Kopf, Sr. and Jean Dollinger Kopf.
Despite her long battle with cancer, Betty continued to be the unique, feisty, stubborn, no-nonsense woman the family loved. She loved reading horror stories, and instilled her love of reading into every one of her daughters. She brought us an “ass-kicking” thunderstorm the day she passed, letting her family know she was at peace, since that was her absolute favorite weather. There was never a day she wouldn’t drive her husband crazy (in the best way, of course). Their love story is like no other. They’re soulmates destined to be together until eternity; they loved each other unconditionally.
One of her favorite meals was rare prime rib with a baked potato, loaded with butter. However, hold the “ass-bread” with “that sweet butter” though or she’d share her disdain. Her loving presence, laughter and sarcasm will be missed greatly by her loved ones. You will always be “forever young” in our eyes.
In addition to her parents, she was preceded in death by her son, Lawrence Edward Watson, Jr. and siblings, William Francis Kopf, Jr., Christian Kopf and Linda Feiler.
She is survived by her husband of 52 years, Lawrence Edward Watson, Sr.; children, Sara Ann Watson, Laura Lee Watson, Frances Marie Watson, Zachariah Watson, Melissa “Mary” Vega; sister, Martha Owens; grandchildren, Courtney, Mallory, Lawrence, Thaddeus, Haylin, Lillian, Anna, Marissa, Adrianna and great-grandchildren, Connor, Aubrey, Emalyn, Bellamy, Jayden and Nathaniel.
